The evening kicks off with Sydney Rock oysters served with chili ponzu and yuzu granita. Paired with the 2022 ‘Arido’ Rosé you can expect notes of musk, orange blossom and their signature note of Amaro.
Fans of seafood will not want to miss our pan-seared scallops served with sweet corn purée and caramelised miso butter. This is beautifully matched with a 2022 Fi Fi Fiano - an homage to the Mediterranean climate from which this varietal stems.
To finish you’ll be treated to an oozing chocolate fondant with raspberry and ice cream. It’s the full service you’ve earned!
